Sweet Potato Breakfast Boats

When it comes to creative breakfast ideas, we really need to think out of the box. Be creative and try something other than your typical "breakfast food." This is also an opportunity to fill your breakfast with tons of nutrients.

 

Sweet potatoes have beta carotene, which is an antioxidant, as well as fiber and B6, vit C,

magnesium, calcium, and iron.

Eggs are a great form of protein. They contain choline, which promotes normal cell activity and liver function and the transportation of nutrients throughout your body. And don't be afraid of the cholesterol in eggs. The cholesterol is actually the good type. Omega 3 fatty acids are the primary source of cholesterol, meaning it is actually good for heart health.

Ingredients

  • 1 med sweet potato

  • Healthy fat, such as grass-fed butter or ghee

  • 1 egg

  • Sea salt and black pepper to taste

  • Parsley or chives for garnish

Method

  • Preheat oven at 350 deg.

  • Wash and scrub sweet potato, then pat dry with a clean cloth.

  • Poke several vent holes into your sweet potato and put into a glass pan.

  • Bake until tender, about 45 minutes, then remove from oven.

  • Take a fork and fluff the inside of the potato. At this point you can melt on a little bit of good fat, like grass-fed butter or ghee.

  • Take out your egg and crack it onto your sweet potato, making sure you do not break your yolk in the process. You want a nice, pretty yolk.

  • Cook a bit more until egg is at the consistency that you want. Fix your sweet potato on a plate and sprinkle a little herb, like parsley or chives. Add your sea salt and black pepper. And don't forget to eat the skin. It's good for you!
