Garlicky Cauliflower Mash

Cauliflower is a cruciferous vegetable. Great for balancing and detoxing hormones, and for anti-cancer as well. Garlic is also known for its detoxing abilities, as well as defense-preventing effects on the body. It also builds the immune system. Along with the added healthy fats, creamy, delicious, and simply full of flavor, it's one of my favorite side dishes.

Ingredients

  • Raw cauliflower, 4 cups

  • Ghee, 1 heaping tsp

  • Himalayan salt or sea salt/pepper to taste

  • Splash of raw milk or non-dairy milk

  • 5 medium-sized garlic cloves

  • Avocado oil or olive oil

  • Fresh parsley and fresh farm butter for garnish

Method

  • Cut garlic into small pieces and sauté in oil until nice and golden brown. Set aside.

  • Boil cauliflower with water until very soft that it starts to fall apart. Drain and put through a colander, squashing all the water out till dry. Add dry cauliflower to a bowl.

  • Add sautéed garlic, a splash of milk, 1 tsp of ghee, and salt & pepper to taste in a stand mixer bowl with a whisk attachment. Whisk till smooth and creamy. Add parsley for garnish.

Feel free to use any non-dairy milk or raw milk in this recipe. Put a dollop of fresh farm butter on top for an extra treat!
